- In a medium bowl, combine the I Can't Believe It's Not Butter!® Light, egg yolk, vanilla extract, and powdered sweetener. Blend for 1 minute until smooth.
- Slowly mix in the almond flour until fully combined. Taste the dough and adjust sweetness as desired.
- Pipe the dough onto the parchment-lined baking sheet, leaving enough space between cookies for them to spread. Avoid flattening them too much.
- Bake the cookies in the preheated oven for about 12 minutes or until the edges turn golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. They will firm up as they cool.
- Transfer the cooled cookies to a wire rack to cool completely for a nice crunch.
