Keto Beef & Cauliflower Rice Casserole Directions:

  • Preheat oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with nonstick spray

  • In a skillet over medium heat, sauté onion in olive oil for 2 minutes

  • Add garlic and cook for 30 seconds

  • Stir in ground beef, Italian seasoning, paprika, salt, and pepper; cook until browned

  • Add spinach and cook until wilted; remove from heat

  • In a large bowl, mix cauliflower rice, Greek yogurt, light butter, dried basil, and almond milk if needed

  • Add beef and spinach mixture and combine thoroughly

  • Transfer to the prepared baking dish and top with mozzarella

  • Bake for 22–25 minutes or until cheese is melted and edges are bubbling

  • Let rest 5 minutes before serving
