Kentucky Butter Cake Directions:

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking pan

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt

  • In a separate bowl, beat light butter and sweetener until fluffy

  • Add eggs one at a time, then vanilla extract

  • Gradually add flour mixture, alternating with Greek yogurt and applesauce, mixing until just combined

  • Spread batter evenly in pan and bake for 25–30 minutes, or until a toothpick comes out clean
