Kentucky Apple Cake Directions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- In a large mixing bowl, beat the eggs, then add the cinnamon, buttermilk, milk, and real vanilla extract. Mix well.
- In a separate bowl, sift together the granulated stevia, baking powder, and baking soda. Add this dry mixture to the egg mixture.
- Melt the I Can't Believe It's Not Butter!® Light, then stir it into the batter.
- Gradually add the all-purpose flour and mix until well combined.
- Fold in the finely chopped apples, salt, light corn syrup, and chopped walnuts.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze. In a saucepan, melt the I Can't Believe It's Not Butter!® Light, then add the baking soda, granulated stevia, and real vanilla extract. Cook over low heat, stirring constantly, until the sweetener is dissolved.
- When the cake is done, remove it from the oven and immediately pour the hot glaze evenly over the hot cake.
- Allow the cake to cool in the pan on a wire rack before serving.
