Hearty Chicken and Vegetable Stew Directions:

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt and pepper, then sear in the pot until browned. Remove and set aside.
  3. Add onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes.
  4. Return chicken to the pot. Add potatoes, green beans, broth, water, tomatoes, Italian seasoning, paprika, and bay leaf. Stir well.
  5. Bring to a boil, reduce heat to low, and simmer covered for 25-30 minutes, stirring occasionally.

  7. Discard the bay leaf before serving.
