Grilled Zucchini Mozzarella Wrap Directions:

  • Preheat the grill or grill pan to 400°F.
  • Slice the zucchini lengthwise into thin strips, about 1/4 inch thick, and pat dry to remove moisture.
  • Place a slice of reduced-fat mozzarella at one end of each zucchini strip, then roll the zucchini around the cheese. Secure with a toothpick. Alternatively, create a "pocket" by crossing two zucchini slices and placing cheese in the center.
  • Brush the wraps with cooking spray and season both sides with salt and pepper.
  • Grill for 4-6 minutes per side until the zucchini is tender and the cheese is melted.
  • Serve with marinara or your favorite dipping sauce!
