Greek Orzo Salad Directions:

  • Cook orzo pasta until soft, then drain and rinse under cold water.
  • In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic powder, dried oregano, and salt to make the dressing.
  • Add Kalamata olives, olive brine, red onion, cucumber, tomatoes, and bell pepper to the bowl. Toss to combine.
  • Stir in the cooked orzo pasta until well mixed.
  • Just before serving, mix in the feta cheese and garnish with fresh oregano, if desired.
