Fried Green Tomatoes Directions:

  • Preheat your air fryer to 400°F (200°C). If you don't have an air fryer, you can bake the tomatoes in the oven at the same temperature.

  • In a shallow dish, combine the cornmeal, whole wheat flour, panko breadcrumbs, salt, pepper, garlic powder, paprika, and cayenne pepper.

  • In another shallow dish, whisk together the unsweetened almond milk and egg.

  • Dip each tomato slice into the almond milk mixture, allowing the excess to drip off. Then, dredge it in the cornmeal mixture, pressing gently to ensure the coating sticks.

  • Place the coated tomato slices in a single layer in the air fryer basket (or on a baking sheet if using an oven). Lightly spray the tops with cooking spray.

  • Air fry for 10-12 minutes, flipping halfway through, until the coating is golden brown and crispy. If baking, cook for 15-20 minutes, flipping once.

  • Serve immediately, optionally with a side of light ranch dressing or a dipping sauce of your choice.
