Fat Flush Soup Directions:

  • Spray a large pot with cooking spray and heat over medium-high heat. Add the ground turkey or chicken breast and cook for 5-7 minutes, breaking it apart, until no longer pink. Remove from the pot and set aside.
  • Spray the pot again if necessary. Add the onion, bell pepper, zucchini, mushrooms, and garlic. Sauté for about 5 minutes, stirring occasionally, until vegetables are tender but not overcooked.
  • Return the cooked meat to the pot. Stir in the vegetable cocktail juice, black beans, crushed tomatoes, lime juice, cumin, and cayenne pepper. Mix until well combined.
  • Bring the soup to a gentle simmer over medium heat, but do not boil. Reduce the heat to low and simmer for 20 minutes, stirring occasionally. If a thinner soup is desired, add up to 1 cup of water.
  • Stir in the cilantro and parsley. Cover and let simmer for an additional 5 minutes.
  • Serve the soup hot, garnished with extra fresh herbs if desired.
