Energy Dessert Directions:

  • Prepare the Base: If the dates are dry, soak them in warm water for 10 minutes, then drain. In a food processor, blend the dates, dried cranberries, oatmeal, almonds, peanuts, pumpkin seeds, and sesame seeds until the mixture becomes finely chopped and starts to stick together.
  • Add the Honey: Pour in the honey and pulse the mixture a few more times until well combined and sticky.
  • Shape the Bars: Line an 8×8-inch baking dish with parchment paper. Press the mixture evenly into the dish, ensuring it is compact.
  • Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and olive oil. Microwave in 20-second intervals, stirring each time, until fully melted and smooth.
  • Assemble the Dessert: Pour the melted chocolate evenly over the pressed base, spreading it out smoothly.
  • Chill and Set: Place the dish in the refrigerator and let it chill for at least 2 hours, or until the chocolate layer is firm.
