Directions:

Preheat your oven to 350°F (175°C).
In a large skillet, cook the lean ground beef, ground pork, and onion over medium-high heat until browned. Season with salt, pepper, cumin, and garlic to taste. Drain excess fat.
In a separate skillet, heat the frying oil over medium-high heat. Briefly fry each corn tortilla for about 10 seconds on each side until they become pliable. Drain on paper towels.
Mix together both cheeses but set aside 1/4 for the top. Mix sour cream, cottage cheese, and most of the cheddar and jack cheeses in a bowl.
In a deep baking dish, start with a layer of enchilada sauce and fried tortillas. Layer meat on top. Add cheese mixture.
Repeat with more tortillas, sauce, and reserved cheese.
Top with final tortillas, sauce, remaining cheese, olives. Feel free to add green onions or cilantro here.
Bake in preheated oven for about 30 minutes.
Sprinkle with diced tomatoes before serving, if desired.
