These eggplant pizzas are a great low-carb alternative to traditional pizza and are customizable with your favorite toppings. Whether you keep it simple with just cheese and herbs or add some pepperoni and olives, they’re sure to satisfy your pizza cravings!

Eggplant Pizza Directions

  • Preheat your oven to 400°F (200°C).
  • Arrange the eggplant slices on a baking sheet lined with parchment paper.
  • Lightly spray both sides of the eggplant slices with olive oil spray (or brush lightly with 1/2 tablespoon of olive oil) and season with salt and pepper.
  • Roast the eggplant in the preheated oven for about 20 minutes, flipping halfway through, until tender and lightly browned.
  • Remove the eggplant from the oven and spread a spoonful of marinara sauce over each slice.
  • Sprinkle reduced-fat mozzarella and Parmesan cheeses evenly over the sauce (use a smaller amount of Parmesan for fewer points).
  • Add a sprinkle of oregano, basil, and garlic powder on top of the cheese.
  • Top with olives and return the eggplant pizzas to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly before garnishing with fresh basil leaves. Serve warm.
