  • In a skillet, sauté the onion, yellow pepper, and spinach until soft and fragrant.
  • Press a wonton wrapper into each muffin tin cup to form a “cup.”
  • Distribute the sautéed vegetable mixture evenly into each wonton cup.
  • In a bowl, scramble the eggs and season with salt, pepper, or your favorite seasonings.
  • Pour the scrambled eggs into each cup, filling them almost to the top.
  • Place one piece of light string cheese on top of each egg-filled wonton cup.
  • Bake for 10-15 minutes or until the eggs are set and the wonton edges are crispy.
  • Remove from the oven and top each with a dollop of salsa before serving.
