Easy Small Batch Ciabatta Rolls Directions
Prepare the Dough (1 hour rise time):
-
In a small cup, dissolve the instant yeast in lukewarm water and stir to mix. Let it sit for about 2 minutes until the mixture starts to bubble and develop a yeasty aroma.
-
In a large bowl, add the flour and salt. Pour in the yeast mixture and whisk until fully combined, making sure to scrape down the sides of the bowl. The mixture will be sticky and wet, which is normal due to its high hydration.
-
Cover the bowl with plastic wrap and let the dough sit at room temperature for 1 hour. (Note: A warmer room temperature will speed up fermentation.)
Stretch and Fold the Dough (1.5 hour rise time):
-
Wet your hands with water and stretch the dough in the bowl by pulling the edges into the center, one side at a time. This should take less than a minute.
-
Cover the bowl again with plastic wrap and let the dough rest for 30 minutes.
-
Repeat this process two more times, with 30-minute rests between each fold. By the end of this, the dough will have risen and nearly doubled in size.
Shape the Dough (40 minutes rise time):
-
Transfer the dough to a floured surface. The dough will still be sticky—dust lightly with flour to handle.
-
Gently pull the dough into a rectangle, being careful not to press out the air pockets.
-
Roll the dough into a log shape, sealing the edge. Divide the dough into 4-5 equal pieces, placing them at least two inches apart on a floured surface.
-
Let the dough rest for 40 minutes. This is the final proofing.
Bake the Ciabatta Rolls:
-
Carefully transfer the dough pieces onto a parchment-lined 8x12-inch baking tray. Dust with flour if needed to help with handling.
-
Place a baking pan filled with water at the bottom of your oven and preheat it to 420°F (215°C) to allow the steam to build.
-
Once the oven is ready, place the tray of dough in and spray some water over the dough immediately. Bake for 20 minutes.
-
Allow the bread to cool for at least 20 minutes. To check if the bread is done, tap the bottom of the rolls—the bread should sound hollow when fully baked.
Enjoy your freshly baked ciabatta rolls!
