- Spray the inside of your Crock Pot with cooking spray.
- Add diced onions, broccoli florets, and matchstick carrots to the Crock Pot.
- In a mixing bowl, whisk together cheddar soup, chicken broth, cornstarch, Italian seasoning, salt, and pepper.
- Pour the mixture over the vegetables in the Crock Pot and stir well.
- Cover and cook on LOW for 3 hours.
- After 3 hours, stir the soup and add almond milk. Mix well.
- Cover and cook on HIGH for 30 minutes.
- Stir in the reduced-fat cheddar and Parmesan cheeses until fully melted.
- Serve warm.
