Crispy Zucchini Roll Skewers Directions:

  • Preheat the oven to 350°F (175°C). Line a baking tray with parchment paper.
  • Dredge zucchini strips in whole wheat flour, egg, and whole wheat panko bread crumbs.
  • Place a strip of cheese and ham on each breaded zucchini strip. Spread mashed potato mixture with turkey bacon and parsley over each strip.
  • Roll up zucchini strips and place 3 on each skewer.
  • Arrange skewers on the prepared baking tray and lightly spray with cooking spray.
  • Bake in the preheated oven for 20 minutes or until crispy and golden brown.
