Crispy Cheesy Potato Bombs Directions:

  • Mash the boiled potatoes until smooth. Season with salt and pepper.

  • Mix in half of the chopped chives.

  • Take a small portion of the mashed potato, flatten it in your hand, and place a small amount of shredded cheese in the center.

  • Form the potato around the cheese into a ball. Repeat until all of the potato mixture is used.

  • Roll each potato ball in whole wheat flour, dip in beaten eggs, then roll in whole grain breadcrumbs until coated.

  • Preheat oven to 400°F (200°C).

  • Place the coated potato balls on a baking sheet lined with parchment paper.

  • Lightly spray each ball with cooking spray.

  • Bake for 25 minutes, or until golden brown and crispy.

  • Sprinkle with remaining chives before serving.
