Creme Brûlée Cookies Directions:

  • Preheat the oven to 350°F (175°C). Line two cookie sheets with parchment paper.
  • In a large bowl, cream together the light margarine, brown sugar substitute, and granulated sugar substitute until light and fluffy, about 3 to 4 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, sift together the whole wheat flour, cornstarch, baking soda, and kosher salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Use a small cookie scoop to portion tablespoon-sized balls of dough onto the prepared cookie sheets. Slightly flatten each ball. Bake for about 9 to 10 minutes or until the edges begin to brown. Allow to cool on the sheets for 2 to 3 minutes before transferring to a cooling rack.
  • For the frosting, beat the reduced-fat cream cheese until smooth. Add the powdered sugar substitute and vanilla extract, mixing until smooth.
  • Spread about a tablespoon of frosting on each cooled cookie. Dip the frosted top into the granulated sugar substitute to coat.
  • Use a kitchen torch to caramelize the sugar-coated frosting just before serving. Allow to cool and harden before serving.
