- 9 whole wheat lasagna noodles
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 10 oz mushrooms, sliced (cremini or button)
- 4 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)
- ½ cup fat-free cottage cheese
- 1 cup shredded reduced-fat mozzarella cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
For the Creamy Béchamel Sauce:
- 2 tbsp light butter
- 2 tbsp all-purpose flour
- 2 cups unsweetened almond milk
- ½ tsp ground nutmeg (optional)
- Salt and pepper to taste
