Creamy Garlic Parmesan Chicken Directions:

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Spray lightly with cooking spray.

  • Season the chicken breasts on both sides with salt, pepper, garlic powder, and paprika.

  • In one bowl, mix breadcrumbs with ¼ cup Parmesan. In another bowl, beat the eggs.

  • Dip each chicken breast in the egg, then coat with the breadcrumb mixture.

  • Place on the prepared baking sheet and spray tops with cooking spray. Bake for 20–25 minutes or until golden and fully cooked.

  • Meanwhile, melt butter in a nonstick pan over medium heat. Add garlic and cook for 1–2 minutes until fragrant.

  • Stir in chicken broth and half-and-half. Simmer gently.

  • Add remaining ¼ cup Parmesan, Italian seasoning, and red pepper flakes. Cook for 3–5 minutes until slightly thickened.

  • Remove chicken from oven, top with sauce, and garnish with parsley.
