Copycat Longhorn Parmesan Crusted Chicken Directions:
- Whisk all the marinade ingredients until well combined.
- Place the chicken breasts in a large freezer bag, seal it, and gently pound the chicken until it's about 1/2 inch thick.
- Season both sides of the chicken with salt and pepper.
- Place the chicken in a fresh freezer bag, add the marinade, seal, and refrigerate for at least 30 minutes, or overnight if possible.
- In a skillet (preferably cast iron), heat 1 tablespoon of vegetable oil over medium-high heat.
- Sear the chicken for 4-5 minutes on each side until golden brown. If the pan gets too hot, reduce the heat slightly.
- Once seared, place the chicken on a plate or baking sheet and cover it with foil to keep warm.
- Preheat your oven to low broil (about 450°F).
- In a mixing bowl, combine the Parmesan, Provolone, and fat-free Ranch dressing. Microwave in 15-second intervals, stirring in between, until melted and smooth. Spread this mixture evenly over the seared chicken.
- Broil for 2-3 minutes until the cheese is golden and bubbly.
- Meanwhile, mix the melted butter, garlic powder, and panko breadcrumbs. Sprinkle this over the chicken.
- Broil for another 1 minute, or until the breadcrumbs are golden. Keep a close eye to prevent burning.
