Coconut Magic Custard Pie Directions:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch pie dish with non-stick spray.
  • In a large mixing bowl, whisk together the eggs and monk fruit sweetener or stevia until smooth and slightly frothy.
  • Add the self-rising flour, almond milk, vanilla extract, and a pinch of salt to the egg mixture. Mix until all ingredients are well combined.
  • Stir in the shredded coconut until evenly distributed throughout the mixture.
  • Pour the batter into the prepared pie dish.
  • Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the pie to cool completely before slicing. As it cools, it will form layers and set.
