This light and fluffy cake is a delightful treat perfect for any occasion. It’s easy to prepare and has a subtle tangy flavor from the lemon zest and juice.

Cloud Cake Directions:

  • Preheat the oven to 340°F (160°C) and line a 20cm springform pan with parchment paper.
  • Separate the egg whites and yolks into two different mixing bowls.
  • In the bowl with yolks, mix condensed milk, lemon juice, lemon zest, and Greek yogurt until well combined. Set aside.
  • Whisk the egg whites with an electric whisk or stand mixer until stiff peaks form.
  • Gradually and gently fold the whipped egg whites into the yolk mixture using a spatula until fully incorporated.
  • Pour the batter into the prepared springform pan. Place this pan inside a larger pan and add water to the outer pan until it is about 3cm high.
  • Bake in the preheated oven for 45 minutes. Turn off the heat and allow the cake to cool completely inside the oven.
  • Refrigerate the cake for 2-3 hours or overnight.
  • Sprinkle powdered sugar on top (optional), slice, and serve.
