Cinnamon Swirl Apple Fritter Bread Directions:

  • Preheat your oven to 350°F (175°C) and lightly spray a loaf pan with non-stick cooking spray.
  • In a small bowl, toss the diced apples with 1/2 teaspoon of cinnamon and set them aside.
  • In a large mixing bowl, whisk together the eggs, unsweetened applesauce, unsweetened almond milk, non-fat Greek yogurt, vanilla extract, and sugar substitutes (brown and white).
  • In another bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and the remaining cinnamon.
  • Slowly fold the dry ingredients into the wet mixture until combined, being careful not to overmix.
  • Pour half of the batter into the prepared loaf pan and spread it evenly. Then, add half of the diced cinnamon-coated apples on top. Pour the rest of the batter over the apples and spread evenly. Add the remaining apples on top.
  • Use a knife or skewer to gently swirl the apples into the batter, creating a marbled effect.
  • Bake the bread for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
