  • In a 9×13-inch baking dish, arrange the chicken breasts in a single layer. Top with fresh spinach and sliced mushrooms. Sprinkle pepper and herb and garlic seasoning evenly over the top.
  • Soften the fat-free cream cheese and whisk it together with unsweetened almond milk and low-sodium chicken broth until smooth. Pour this mixture evenly over the chicken, spinach, and mushrooms.
  • Cover the dish loosely with foil (do not seal tightly) and bake for 20 minutes.
