Chicken Jalapeño Popper Chili Soup Directions:
- In a large pot, cook the chopped turkey bacon over medium heat until crispy. Remove the bacon with a slotted spoon, leaving the bacon fat in the pot.
- Add the diced chicken and cook for 5-6 minutes until browned. Remove the chicken and set aside.
- In the same pot, add the diced onion, garlic, and sliced jalapeños. Sauté for 3-4 minutes until softened.
- Add the chicken broth, diced tomatoes with green chilies, cumin, smoked paprika, salt, and pepper. Stir well.
- Return the chicken to the pot and simmer for 15 minutes until the chicken is cooked through.
- Stir in the fat-free cream cheese, reduced-fat cheddar, and almond milk. Cook for another 5 minutes, stirring frequently until creamy.
- Ladle into bowls and top with crispy turkey bacon, fresh cilantro, and extra jalapeño slices.
