Chicken Cordon Bleu Meatloaf Directions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground turkey, whole wheat breadcrumbs, reduced-fat Parmesan cheese, unsweetened almond milk, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- On a piece of parchment paper, flatten the turkey mixture into a rectangular shape, about 1/2 inch thick.
- Layer the reduced-fat Swiss cheese and deli turkey slices evenly over the turkey mixture.
- Carefully roll the meatloaf from one end to the other, using the parchment paper to help you roll it tightly.
- Transfer the rolled meatloaf to a greased baking dish.
- Brush the Dijon mustard over the top of the meatloaf, then sprinkle with part-skim mozzarella cheese.
- Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden brown.
- Let the meatloaf rest for 10 minutes before slicing and serving.
