Chicken Cacciatore Directions

  1. Spread the chicken thighs and drumsticks on a tray. Sprinkle both sides with salt and pepper.
  2. Heat the olive oil over high heat in a large, deep, heavy-based pan (preferably one with a lid). Brown the chicken thighs skin-side down for about 6 minutes until golden. Flip and cook the flesh side for about 1 minute, then remove the chicken and set aside.
  3. Brown the drumsticks on both sides, about 1½ minutes per side, then set aside with the chicken thighs.
  4. Pour off all but 2 tablespoons of fat from the pan. Reduce the heat to medium and cook the onion, rosemary, bay leaves, and dried oregano for about 3 minutes, until the onion softens.
  5. Add anchovies and garlic to the pan, mashing the anchovies until they break down. Cook until the garlic is golden.
  6. Add mushrooms and red bell peppers, cooking for about 5 minutes until softened. Stir in the tomato paste and cook for 2 minutes to remove the sour flavor.
  7. Pour in the wine, stirring and bringing it to a simmer. Reduce the wine by about 75%. Then add the chicken stock, crushed tomatoes, salt, and pepper. Stir, bring to a simmer.
  8. Return the chicken to the pan (skin-side up) and pour any accumulated juices from the tray into the sauce. Once the liquid simmers, cover, reduce the heat to medium, and simmer for 20 minutes.
  9. Remove the lid, add olives, and simmer uncovered for an additional 10 minutes to thicken the sauce.
  10. Serve the chicken with plenty of sauce over mashed potatoes or polenta, garnished with parsley if desired.
