Chicken Cacciatore Directions
- Spread the chicken thighs and drumsticks on a tray. Sprinkle both sides with salt and pepper.
- Heat the olive oil over high heat in a large, deep, heavy-based pan (preferably one with a lid). Brown the chicken thighs skin-side down for about 6 minutes until golden. Flip and cook the flesh side for about 1 minute, then remove the chicken and set aside.
- Brown the drumsticks on both sides, about 1½ minutes per side, then set aside with the chicken thighs.
- Pour off all but 2 tablespoons of fat from the pan. Reduce the heat to medium and cook the onion, rosemary, bay leaves, and dried oregano for about 3 minutes, until the onion softens.
- Add anchovies and garlic to the pan, mashing the anchovies until they break down. Cook until the garlic is golden.
- Add mushrooms and red bell peppers, cooking for about 5 minutes until softened. Stir in the tomato paste and cook for 2 minutes to remove the sour flavor.
- Pour in the wine, stirring and bringing it to a simmer. Reduce the wine by about 75%. Then add the chicken stock, crushed tomatoes, salt, and pepper. Stir, bring to a simmer.
- Return the chicken to the pan (skin-side up) and pour any accumulated juices from the tray into the sauce. Once the liquid simmers, cover, reduce the heat to medium, and simmer for 20 minutes.
- Remove the lid, add olives, and simmer uncovered for an additional 10 minutes to thicken the sauce.
- Serve the chicken with plenty of sauce over mashed potatoes or polenta, garnished with parsley if desired.
