Directions:
Wash the aubergines and cut them lengthwise in half, make a few cuts in each of those halves so that once they are cooked, it is easier to remove the pulp. Drizzle them with a few drops of olive oil and season to taste.
We place them on a tray and take them to the preheated oven to moderate, for about 15 minutes or until you see that the interior is already tender.
Once they are ready, remove them from the oven and let them cool down.
We remove the pulp with the help of a spoon, doing it very carefully so that the shell does not break.
On the other hand, we are going to prepare the filling. Cut the breast into squares and brown them well with a drizzle of oil in a frying pan. We season.
Add the aubergine pulp and add the creamy cheese, mix and let cook for a few more minutes.
Then we fill each of the aubergines to the top and sprinkle with a little grated cheese.
Bake for about 15 minutes, to give the grated cheese time to melt.
