For the Crust:

- 2 tablespoons light butter, melted
- ½ cup erythritol or monk fruit sweetener
- 1 teaspoon baking powder
- 1 teaspoon grated lemon zest
- ⅛ teaspoon salt
- 1 teaspoon vanilla extract
For the Cherry Filling:
- 3 ½ cups frozen sour cherries (do not thaw)
- ½ cup erythritol or monk fruit sweetener
- 1 ½ tablespoons cornstarch
- 1 teaspoon fresh lemon juice
- ¼ teaspoon almond extract
For the Optional Almond Glaze:
- 1 cup powdered erythritol sweetener
- 2 tablespoons unsweetened almond milk (or fat-free milk)
- ¼ teaspoon almond extract
