- In a small bowl, mix the light butter with minced garlic. If using cooking spray, skip the butter and simply spray the bread. Spread this garlic butter mixture evenly on one side of each slice of bread.
- Heat a skillet with cooking spray over medium heat. Add the shrimp, lemon juice, salt, and pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat and set aside.
- Heat a large non-stick skillet or griddle over medium heat.
- Add a slice of bread, garlic butter side down, to the pan.
