Cheesy Baked Chicken and Potatoes Directions:

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.

  • In a saucepan, melt the light butter over medium heat. Add garlic and sauté until fragrant.

  • Stir in almond milk and cornstarch, whisking continuously until slightly thickened.

  • Add mozzarella, cheddar, Parmesan, and all seasonings. Stir until smooth and melted.

  • Layer half of the potatoes in the baking dish. Pour some of the cheese sauce over them.

  • Place chicken breasts on top, then cover with remaining potatoes.

  • Pour the rest of the cheese sauce over everything. Cover with foil and bake for 35 minutes.

  • Remove foil and broil for 5–10 minutes until the top is golden.

  • Let rest for a few minutes, sprinkle with fresh chives, and serve warm.
