Cauliflower Fake out Potato Salad Ingredients:
Instead of mayo I used fat free greek yogurt with ranch seasoning and sprinkle it into yogurt and mustard for the mix
Then eggs of course / celery / purple onion and some white as well / diced cilantro / then to top off diced green peppers
For the Salad
1 medium cauliflower chopped into bite sized florets
1 teaspoon salt
1 teaspoon pepper
1/2 large purple onion finely chopped
3 hard boiled eggs chopped
cooking spray
For the Dressing
1/2 cup fat free greek yogurt
2 tablespoons Dijon mustard
1 tablespoon ranch seasoning
2 tablespoons chopped green onions
