Bobotie Directions:

  • Tear the bread into pieces and soak in the almond milk.
  • Preheat the oven to 180°C (356°F).
  • Heat a pan sprayed with cooking spray. Sauté the onions and garlic until softened.
  • Add curry powder, chutney, apricot jam, Worcestershire sauce, turmeric, and red wine vinegar. Cook for 1-2 minutes.
  • Drain the soaked bread and mash with a fork.
  • Add the ground beef, soaked bread, raisins, salt, pepper, crumbled stock cube, and beaten eggs to the onion mixture. Stir to combine.
  • Spoon the mixture into a greased oven dish.
  • Whisk remaining eggs with a pinch of salt and turmeric. Pour over the meat mixture.
  • Place bay leaves on top.
  • Bake for 50-60 minutes or until golden brown.
  • Serve with yellow basmati rice.
