Bobotie Directions:
- Tear the bread into pieces and soak in the almond milk.
- Preheat the oven to 180°C (356°F).
- Heat a pan sprayed with cooking spray. Sauté the onions and garlic until softened.
- Add curry powder, chutney, apricot jam, Worcestershire sauce, turmeric, and red wine vinegar. Cook for 1-2 minutes.
- Drain the soaked bread and mash with a fork.
- Add the ground beef, soaked bread, raisins, salt, pepper, crumbled stock cube, and beaten eggs to the onion mixture. Stir to combine.
- Spoon the mixture into a greased oven dish.
- Whisk remaining eggs with a pinch of salt and turmeric. Pour over the meat mixture.
- Place bay leaves on top.
- Bake for 50-60 minutes or until golden brown.
- Serve with yellow basmati rice.
