Blackened Salmon Stuffed with Spinach and Parmesan Directions:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a skillet, heat olive oil over medium heat. Sauté garlic for about 1 minute until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
  • Combine the cooled spinach with Parmesan cheese in a mixing bowl.
  • Make a horizontal slit in each salmon fillet to create a pocket. Stuff each fillet with the spinach-Parmesan mixture.
