Biscoff Banana Pudding Directions:

  • In a mixing bowl, whisk together the sugar-free pudding mix and almond milk until smooth

  • Let sit for 5 minutes to thicken

  • In a separate bowl, mix Greek yogurt, vanilla extract, and sweetener if using

  • Fold the thickened pudding into the yogurt mixture until fully combined

  • In a serving dish, spread half of the crushed Biscoff cookies

  • Top with half of the banana slices and half of the pudding-yogurt mixture

  • Repeat layers with remaining cookies, bananas, and pudding

  • Spread fat-free whipped topping over the top

  • Chill in refrigerator for at least 2 hours

  • Before serving, sprinkle with reserved crushed Biscoff cookies
