Avocado Sushi Cake Directions:

  • Rinse and cook sushi rice; once cooked, season with a mixture of rice vinegar, a small amount of salt, and sweetener if desired. Let it cool to room temperature

  • Line a springform cake tin with parchment paper and place one sheet of nori at the base

  • Layer half the rice, followed by avocado, cucumber, and fish slices

  • Repeat layers once more, finishing with a final layer of rice

  • Cover and refrigerate for at least 2 hours

  • Unmold and garnish with sesame seeds and additional nori strips

  • Serve with soy sauce, pickled ginger, and wasabi
