This lighter version of avocado pasta salad is just as creamy and flavorful but with fewer points. It's an excellent choice for a satisfying, healthy meal!

Avocado Pasta Salad Directions:

  • Bring a large pot of salted water to a boil. Add the whole wheat bowtie pasta and cook until al dente (about 8-10 minutes).
  • Drain the pasta and rinse under cold water. Set aside to cool completely.
  • In a small bowl, whisk together olive oil, lime juice, red wine vinegar (if using), garlic powder, salt, pepper, and chili flakes (if using).
  • In a large mixing bowl, combine the cooled pasta, diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
  • Pour the dressing over the salad and toss gently to combine.
