Apple Lemon Cake Directions:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the diced apple with the juice of half a lemon.
- Add 1 tablespoon of stevia and a sprinkle of cinnamon to the apple mixture. Stir until evenly coated.
- Spray a small skillet with olive oil and heat over medium heat. Add the apple mixture and cook for about 5 minutes until the apples are tender. Remove from heat and set aside.
- In a large bowl, whisk together the eggs, stevia, salt, and vanilla extract until well combined.
- Gradually add the unsweetened applesauce and skim milk to the egg mixture, whisking until smooth.

- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cover the top with foil if it browns too quickly.
- Let the cake cool in the dish for 10 minutes, then transfer it to a wire rack to cool completely.
