Weight Watchers-Friendly Cheesy Corn Bake Ingredients:
2 cups frozen corn kernels, thawed
1/4 cup light mayonnaise
1/4 cup reduced-fat mozzarella cheese, shredded
1/4 cup reduced-fat cheddar cheese, shredded
1 green onion, chopped
1 tablespoon sugar (optional)
Salt and pepper to taste
1 teaspoon Korean chili powder or paprika (optional)
Weight Watchers-Friendly Cheesy Corn Bake Directions:
Preheat oven to 400°F (200°C).
In a large bowl, combine corn, mayonnaise, half the mozzarella and cheddar cheeses, green onion, and sugar if using. Season with salt, pepper, and chili powder or paprika.
Transfer the mixture to an ovenproof dish and spread evenly. Top with the remaining cheeses.
Bake for 10-15 minutes until the cheese is melted and bubbly. For a golden crust, broil for 2-3 minutes, watching carefully.
