Lemon Blueberry Loaf Weight Watchers Recipe

Lemon Blueberry Loaf Weight Watchers Ingredients:

1 1/2 cups All-Purpose Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/4 teaspoon Salt

1/2 cup Unsweetened Applesauce

1/2 cup Truvia Baking Blend (or another sugar substitute)

2 large Eggs

1/3 cup Freshly Squeezed Lemon Juice

Zest of 1 Lemon

1/2 cup Plain Greek Yogurt (non-fat)

1 teaspoon Vanilla Extract

1 cup Fresh or Frozen Blueberries (tossed in 1 tablespoon of flour to prevent sinking)

Lemon Blueberry Loaf Weight Watchers Directions:

    Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

    Mix Wet Ingredients: In a large mixing bowl, beat the unsweetened applesauce and Truvia Baking Blend together until well combined. Add the eggs, one at a time, beating well after each addition. Mix in the lemon juice, lemon zest, Greek yogurt, and vanilla extract.

    Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

    Fold in Blueberries: Gently fold the flour-coated blueberries into the batter.

    Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

    Cool: Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
